8 | oz. | Swiss, Monterey Jack (w or w/o jalapeno peppers), or cheddar cheese, shredded | |

1/3 | cup | butter (no substitutes) | |

|||
1/2 | teaspoon | dried Italian seasoning, crushed | |
|
|||
1/4 | teaspoon | lemon-pepper seasoning | |
|
|||
1/2 | cup | all-purpose flour | |
|
|||
1 | cup | crisp rice cereal | |
|
Let cheese and butter stand at room temperature for 30 minutes.
Heat oven to 375.
Beat cheese and butter together in a large mixing bowl till combined. Add Italian seasoning and lemon-pepper seasoning. Knead in flour. Stir in cereal till blended well.
Shape dough into 3/4-inch diameter balls. Place on sheet lined with parchment paper. Flatten each ball with a fork dipped in water till 1/4-inch thick. Bake 11 to 12 minutes or till lightly golden. Serve warm.
